History of Chai Tea

Masala chai has a long history, legends say that it was drunk even 5000 years ago. It is said that masala chai was created at the instigation of the then king Harshvardhana. The inhabitants of India were known for adding medicinal herbs and spices to tea, which was used for Ayurvedic medicine and healing purposes. However, the recipes for this drink vary depending on the continent, country or region where the drink was made, in some places green tea leaves are added to it, in others it is even served with salt.

The original version of masala chai did not contain the tea leaves, milk, or sugar that are associated with the drink today. The addition of black tea leaves, milk, and sugar was not popularized until the mid-19th century, when the Camellia sinensis assamica variety of tea was discovered in India. At that time, the British ruled the continent, and their habit of drinking strong black tea with milk and sugar was reflected in the preparation of spiced masala chai, and soon the masala chai latte was born.

Chai is a Hindi word that means "tea" in many cultures and languages, derived from the Chinese word "cha", which means tea. The word chai is used to refer to tea in at least 56 languages and other dialects. Masala or masala means a mixture of spices, in the diverse Indian cuisine you will find various masalas that differ in their composition and the purpose for which they are used. Masala chai   So in translation it means "spiced tea", but sometimes you can also come across the combination yogi tea.

Masala chai is a traditional cleansing drink of Indian Ayurveda . It is based on black tea, most often Assam or Darjeeling , which come from India . The mixture is complemented by invigorating Ayurvedic spices such as ginger, cloves, cardamom, cinnamon, fennel, star anise, saffron, nutmeg and black pepper.

Chai tea is often sweetened with brown sugar, maple syrup, or honey to enhance its flavor. It is also often served with milk as a chai latte.

Chai and its effects

Chai is most often prepared with milk, which gives this oriental drink a delicious creamy taste. Chai latte began to appear in cafes only in the mid-90s, today it can be found on the menu of almost every cafe and tea house. The mixture of black tea , exotic spices and milk is a great substitute for cappuccino or coffee latte.

Thanks to its unique spicy taste and aroma, it is often associated with autumn and the Christmas season, as it warms you up and gives you energy.

Chai masala also has a positive effect on health, supports digestion, stimulates the immune system and, thanks to the theaflavin content in black tea, also fights viruses. The caffeine in black tea will pleasantly stimulate your body and mind.

Learn to brew Chai tea

Chai is a drink with an intense flavor. It is based on a blend of black tea, which is often strong on its own, and its flavor is enhanced by Indian spices. The combination of these ingredients is best enjoyed with milk and sweet honey.

  • 2 cups of water
  • 4 whole cinnamon sticks
  • Cardamom 4 pcs / teaspoon crushed
  • Cloves 4 pcs
  • Star anise ½ pc.
  • Tea 5 teaspoons
  • Ginger – 2 slices
  • Milk 1 cup
  • Honey – 2-4 teaspoons

In a smaller pot, bring water with spices and ginger to a boil, bring to a boil and cook over low heat for about 3-5 minutes, turn off and let steep for 15 minutes. Then heat the mixture again until it starts to boil and turn off. Pour in the tea and let steep for 3-5 minutes. Strain the prepared drink, now you can sweeten it with honey, brown sugar or maple syrup and stir until the sweetener is completely dissolved. You can enjoy chai just like this, if you want to soften its taste, heat the milk to about 60 °C and pour into the tea mixture. Stir and you can serve.

Homemade Chai latte

Enjoy the combination of Indian tea and masala spices in combination with whipped milk. The recipe for a chai latte is almost identical, only you froth the milk and slowly pour the chai mixture into the milk foam. If you have a coffee machine with a steam nozzle, be careful not to exceed 60 °C (you can tell by holding your hand over the mug of milk) otherwise your milk will burn and not froth. You can also froth the milk with a hand whisk or use a French press, with the pump of which you create milk foam in a few presses. For best results, use whole milk, but you can also try a chai latte with regular milk or plant-based substitutes such as almond milk, oat milk or soy milk.

Pour the milk into 2/3 of the glass and top up the rest with tea. If you pour the tea over the edge of the glass or over a spoon, you can achieve an effective separation of the layers.

Chai latte is usually served hot, but in the summer you can also enjoy it cold and with ice.
