Description
A unique and complex tea grown in the north of Vietnam, in the Mộc Châu district of Sơn La province. Tea trees are grown here at a high altitude of around 1 100 m. The cultivar used to produce this tea is locally called Thanh Tam, but it is actually the Qing Xin ‘Green Heart’ cultivar originally imported from Taiwan. This oolong is oxidised to approximately 70%. When the leaves are infused, an ochre-coloured infusion is produced. You can detect cocoa beans in the aroma. The taste is dominated by roasted chestnuts and cereal malt.
Preparation
Use 12 g of tea (approx. 6 heaped tsp) per 1 liter of water at the temperature of 90°C. Allow to infuse for 5 minutes. Strain and serve. Suitable for 3-4 infusions.
